Grate the ginger, crush the garlic clove, finely chop the fresh parsley and roughly chop the walnuts.

Cut the carrots into long ribbons using a peeler.

In a small bowl, stir together tahini, olive oil, lemon juice, ginger and garlic to form a smooth dressing.
