Preheat the oven to 200°F and line a baking sheet with baking paper.
Slice the carrot, cut the onion in half rings and peel the garlic.
Divide the carrots, onion and garlic on the baking sheet and rub them in with coconut oil. Roast softly and thoroughly for 15-20 minutes.
Puree the roasted vegetables together with the other ingredients in a food processor or blender.
Store in a sealed jar in the refrigerator.
