Cashew nuts (unroasted)
Chocolate pure (> 70% cocoa)
Stir coconut yogurt, cashew paste, honey and vanilla together in a bowl.
Spoon in the whole cashew nuts and divide the mixture between 5 or 6 popsicle molds.
Freeze the ice cream for at least 5 hours, but preferably overnight.
Before serving, melt the dark chocolate au bainmarie. Take an ice cream out of its shape (hold it under the hot tap until it comes loose) and then scoop chocolate over it until the ice cream is completely covered. Let the chocolate air dry for 12 minutes (or put it in a block of styrofoam if you have it!), Then you can put the ice cream down.
Repeat with the rest of the ice creams.
Serve immediately or freeze the ice creams again until you want to serve them.
