Preheat the oven to 390°F.
Cut the cauliflower into florets and dice the sweet potato. Cut the red onion into rings.
Combine cauliflower florets and sweet potato in a pan and add water until the vegetables are almost covered. Bring to boil.
Let the vegetables cook for 7 to 8 minutes, drain the cooking liquid and puree the vegetables with a hand blender. Stir thyme and salt into the puree.
Divide the sauerkraut over the bottom of a baking dish and place salmon, dill, red onion and olives on top of it. Cover with a thick layer of vegetable puree.
Bake for 30 minutes.
