Cut the onion in half rings, squeeze the garlic, the cauliflower into florets and peel and dice the apple.
Heat the coconut oil in a stockpot and fry the onion gently.
Fry the garlic for a few seconds before adding the cauliflower and apple.
Spoon well and cook for a few minutes.
Add curry, stock and coconut milk and bring to the boil.
Boil the soup for 8-10 minutes and then puree using the immersion blender.
Add some salt to taste.
