Peel the celeriac and grate the red cabbage. Finely chop the fresh tarragon.

If necessary, make the mayonnaise yourself.

Use a spiralizer to grate the celeriac and kohlrabi into long strings. Don't have a spiral cutter? Then you can also simply grate the vegetables.

Mix the celeriac and kohlrabi with the other ingredients and mix well.
