Peel the garlic, ginger and onion and cut the chicken breast into cubes.
Mix the onions, garlic, ginger, chili powder, lime juice, fish sauce, sunflower butter and coconut milk in a blender or food processor and blend until smooth.
Place the chicken cubes in the slow cooker and pour the satay sauce over them.
Switch the slow cooker on the low setting and leave the dish to cook for 3 hours.
Season to taste with some salt.
TIP: Delicious with sweet potato fries or cauliflower rice.
