Chop the onion, grate the ginger, finely chop the garlic and fresh coriander.
Put the chicken thighs in the slow cooker.
Mix the onion, garlic, ginger, garam masala, cumin, coriander, turmeric, cardamom, salt and coconut milk together in a bowl. Pour this mixture over the chicken thighs.
Switch the slow cooker on the low setting and cook the dish for 4 to 5 hours.
Garnish with the fresh coriander and almond flakes.
TIP: This dish is delicious served with cauliflower rice or as a basis for a casserole.
