Heat the ghee or coconut oil in the slow cooker pan (this can usually be done on the stove) and fry the pieces of chicken, on all sides, until brown. Take the chicken out of the pan and fry the onion and leek, for 2 to 3 minutes, in the remaining fat.
Return the chicken to the pan and add the remaining ingredients.
Switch the slow cooker to the low setting and simmer the soup for 6 hours.
Take the chicken out of the soup and carefully remove the meat from the bones. Put the meat back into the pan with the vegetables. You can save the bones and skin to make broth from them again.
