Preheat the oven to 390°F.
Cut the peach into wedges and finely chop the coriander.
Take the chicken thigh fillets and fold them open them. Sprinkle with some freshly ground pepper.
Now place 1 tablespoon of fresh coriander in a fillet, and then a peach wedge.
Fold the fillets piece by piece and wrap 2 slices of bacon around them so the stuffing cannot fall out.
Place the fillets next to each other in a small roasting tin and bake them in the middle of the oven for approximately 20-25 minutes until the bacon is crispy.
