Melt the coconut oil in a saucepan on a low heat. Do not let it get too warm.
Mix the almond butter, honey and vanilla through the coconut ooil.
Add half of the cocoa and stir until smooth.
Add the rest of the cocoa and keep stirring until you have a thick paste.
Put the paste in the fridge for 1 hour until firm.
Crumble the dried banana in a blender or food processor and put into a bowl.
Take the chocolate paste out of the fridge and use a teaspoon to scoop out each truffle. Roll each truffle in the palms of your hands to form a ball and then roll through the banana crumbs.
Place the truffel on a plate and repeat with the rest of the paste. Store the truffles in the fridge.
