Kaffir lemon leaf

Finely chop the garlic, grate the ginger, grate the lime rind and squeeze the juice, finely slice the coconut butter, cut the carrot and salmon into cubes.
Grease the slow cooker with some coconut oil and add the onion, garlic, ginger, lime, fish sauce, kaffir lemon leaf, bay leaf, coconut butter and some water.
Bruise the lemon grass and add to the slow cooker.
Switch the slow cooker on the low setting and leave the sauce to cook for 30 minutes.
Add the carrot and salmon and leave to cook for another 2 hours on the low setting.
TIP: Cauliflower rice goes very well with this dish. It absorbs all the flavors and thus complements the dish.
