Pour half of the coconut milk, plus the egg yolks, maple syrup, coffee, cardamom and vanilla in the blender and grind until smooth.

Pour the mixture into a pan and add the rest of the coconut milk.

Heat the mixture to 185°F while stirring.

Allow to cool completely and then follow the instructions of your ice cream maker to make ice cream from the mixture.
