Mix lime juice with garlic, salt and all herbs.
Cut the pork belly diagonally on the skin side and rub it in with the herb mixture.
Let it marinate in the fridge for at least 1 hour, preferably longer.
Preheat the oven to 430°F.
Place the pork belly in a baking dish with the skin side up and bake for 30 minutes.
Lower the oven temperature to 345°F and fry the pork belly for another hour or until it has become crispy.
Cut the pork belly into pieces before serving.
