Preheat the oven to 390°F and cover a baking dish with baking paper.

Cut the leek into rings and finely chop the garlic cloves.

Cut the pumpkin into cubes, cut the kale and finely chop the parsley.

Heat the coconut oil in a frying pan and fry the leek and garlic.

Add the minced meat and fry it loose and brown.

Now mix pumpkin, kale and parsley into the dish and fry for 3-4 minutes.

In the meantime, beat the eggs with salt and pepper.

Spoon the meat-vegetable mixture into the baking dish and pour the eggs over it.
