Boil the eggs until they are hard and then halve them.
Cut the onion and leek into rings. Finely chop the garlic cloves.
Cut the red bell pepper into cubes and cut the cauliflower into florets.
Heat the coconut oil in a soup pan and gently fry the onion, leek, garlic and bell pepper until the mixture starts to smell nice and the vegetables soften.
Add cauliflower and pour the stock, coconut milk and coconut aminos over the vegetables. Also add the curry.
Bring to the boil and cook the soup in about 10 minutes.
Add salt to taste and serve with broccoli sprouts and boiled eggs.
