Combine the ingredients for the base in a food processor and grind into a crumbly, sticky mass.
Spread the mixture on the bottom of a cake tin (I used a 14 by 5 inch rectangular cake tin) and press it firmly.
Pour the coconut milk into a saucepan and sprinkle the gelatin powder over it. Let stand for 10 minutes.
Stir the gelatin well into the coconut milk and add maple syrup, lemon juice and vanilla powder.
Bring the mixture just to a boil, and then immediately remove the pan from the heat.
Cut 1 pear into thin slices and divide this over the cake base. Pour the coconut mixture over it and let the cake set in approximately 3 hours.
Cut the other pear into slices just before serving and garnish the cake with it.
