Preheat the oven to 430°F and line a baking sheet with aluminum foil.
Remove the skin of the sweet potato and the pumpkin with a peeler and then cut the vegetables into fries of about ½ inch thick.
Place the fries on the baking tray and drizzle with the goose fat, sprinkle with rosemary and garlic. Mix the fries well so they are covered with herbs and oil.
Bake the fries in the center of the oven for 15 minutes and then turn them over. Then bake for another 10 minutes.
Season the fries with salt and pepper, and enjoy your meal!
