Combine all dry ingredients in a mixing bowl and then knead the wet ingredients through until a thick and sticky dough forms.
Cover the mixing bowl and put it in the fridge for at least 1 hour to become more firm.
In the meantime, preheat the oven to 320°F and cover a baking sheet with baking paper.
Roll small balls of the dough and press them flat. Divide over the baking sheet.
Bake the gingerbread nuts in 20-25 minutes (depending on the size of the nuts) until there are slight cracks in the dough. Allow to cool completely so they become crunchy.
