Shrimps (peeled and washed)
Cut the cauliflower into florets. Chop the onion and finely chop the garlic, coriander and parsley. Grate and squeeze the lime.
Grate the cauliflower florets into rice-sized grains using a food processor or blender.
Heat the coconut oil in a frying pan and gently fry the onion.
Fry the garlic and cumin seeds for a few seconds and then add the cauliflower rice.
Mix the cauliflower rice well and then add the shrimps, lime juice, lime zest and the salt. Stir-fry this in 3-4 minutes until done.
Mix coriander and parsley into the dish at the last minute.
