Olive oil (extra vierge)
Preheat the oven to 390°F and line a baking sheet with baking paper.
Cut the cauliflower into florets and peel the garlic.
Mix the coconut oil with the cauliflower florets and divide it over the baking sheet.
Roast the cauliflower in 20 minutes.
Puree the cauliflower with tahini, garlic, cumin seeds, olive oil, lime juice and some pepper and salt.
Serve the hummus with sliced vegetables of your choice. Think of celery, carrots, kohlrabi, beetroot etcetera.
