Preheat the oven to 400 and line a baking tray with baking parchment.
Cut the pears into wedges.
Wash the sweet potato and cut this into cubes. Coat the potato cubes with coconut oil and divide them over the baking tray.
Roast the potato cubes for approximately 20 minutes until cooked.
Take the potatoes out of the oven and allow to cool. Meanwhile, place the Parma ham on a baking tray and bake at 400 for 5-6 minutes until crisp.
Mix the lamb's lettuce, pear, chestnuts and sweet potato together in a large bowl and crumble the Parma ham on top. Drizzle with olive oil.
