Coconut oil (melted)
Stir all the ingredients together (except for the coconut oil) in a saucepan.
Put the pan on a medium high heat and continue stirring until the mixture starts to thicken. Keep stirring to stop it going lumpy.
Take the pan off the heat and stir in the coconut oil.
Let the lemon curd cool down completely and store in the fridge until needed.
