Preheat the oven to 175 ° C and grease a square baking tin (approx. 21 x 21 cm) with some coconut oil.

Mash the bananas with the eggs and coconut oil in a food processor or blender until smooth.

Stir banana flour, chufa flour, coconut blossom sugar, gingerbread spices, baking salt and lemon zest through the puree until a thick batter forms.
