Cut the chicken fillet into cubes.

Grate the carrots and dice the beetroot. Finely chop the coriander. Grate the ginger if desired.

Heat the coconut oil in a frying pan and fry the chicken cubes until brown and tender.

Season with fresh ginger, pepper and salt.

Mix the remaining ingredients for the salad and serve with the fried chicken.
