Chop the olives and squeeze the lemon.

Start by making the salad: grate the cucumber and put it in a bowl together with the chopped olives, capers, lemon juice, mayonnaise, Mediterranean herbs and salt. Mix well.

Peel all the cloves of the garlic bulb and cut into 3 or 4 pieces.

Heat the coconut oil in a frying pan and fry the garlic pieces in this for about 3 minutes until golden brown on a medium heat. Make sure they don't burn!

Garnish the salad with the fried garlic and enjoy!
