Cut the chicken fillet into cubes.
Cut the onion in half rings, peel the garlic and chop finely.
Grate the ginger, peel the mango and cut into cubes.
Finely chop the coconut butter. Cut the spring onion into rings.
Finely chop the coriander and fresh mint.
Heat the coconut oil in a wok or frying pan and gently fry the onion, garlic and ginger for a few minutes.
Add the chicken cubes and fry for 3-4 minutes until brown and done.
Add the mango cubes to the dish and add coconut butter and water. Keep stirring until the butter has completely dissolved.
Let the dish simmer gently and thicken for 5-10 minutes.
Serve with spring onion, mint and coriander.
