Smoked bacon strips
Preheat the oven to 390°F and grease 4 cocottes dishes with some coconut oil.
In the meantime, fry the bacon cubes in a frying pan.
Add the mushrooms and fry them until they are completely cooked, till no more moisture will come out.
Mix the spring onion at the last minute through the bacon and mushrooms and divide the mixture between the cocottes.
Beat the eggs with some pepper and divide this over the cocottes. Place a leaf of sage on top of each tray.
Bake the mini frittata in the oven for 25 minutes.
