Beat the eggs with salt, and heat 1 tablespoon of coconut oil in a frying pan. Bake 2 omelets of the beaten eggs and set them aside.

Heat 1 tablespoon of coconut oil in a frying pan and fry the brown mushrooms over medium-low heat for 5 to 7 minutes until tender.

Fill the omelets with the fried mushrooms and garnish with chives, basil and pepper.
