Lemon (juice and grater)
Preheat the oven to 340°F and grease a cake pan with some coconut oil.
Grind the sunflower seeds into flour in a food processor or blender and stir the baking soda, the mixed spices and salt through the flour mixture.
Stir the eggs, coconut oil, maple syrup, lemon juice and lemon zest into the flour until a thick batter forms.
Fold the dried fruits into the batter and then divide the batter over the cake tin.
Bake the cake in about 45 minutes until golden and cooked, or until a skewer comes out clean.
