Chop the onion and dice the apple.

First make the pulled chicken by heating the coconut oil in a frying pan and briefly frying the onion in it.

Place the chicken fillet in the pan and fry it brown on both sides. Season with salt and pepper.

Add the apple, put a lid on the pan and let the chicken cook on a low heat for 20 minutes.

Cut the carrots into long ribbons, cut the spring onion into rings.

Beat the eggs with the salt.

Heat 1 tablespoon of coconut oil in a frying pan and fry small omelettes.

Is the chicken ready? Then pull the meat apart into threads with 2 forks, stir the meat well into the onion and apple.

Divide the avocado and carrot over the omelets, then put the pulled chicken on top and garnish with spring onion and sesame seeds.
