Cut the carrot into small cubes, the pear into wedges and chop the walnuts.
Heat the coconut oil in a frying pan and fry the cubes of carrot around brown and al dente in 5 minutes.
In the meantime, beat the eggs with cinnamon and salt. Pour the eggs into the pan at the root and quickly divide the pear slices over them.
Let the omelette set on a low heat, you don't have to turn it over.
Serve with the coconut yogurt and walnuts.
