Slice the carrot, grate the ginger, cut the onion in half rings and chop the garlic.

Combine the meat, carrot, onions, garlic, ginger and coconut aminos in a slow cooker and cook on low for 8 hours.

Season the dish with some salt and pepper.

Cut the courgettes into long strips using a spiral cutter and mix them in the still warm stew. This makes the strings nicely cooked

Garnish with the cashew nuts just before serving.
