Preheat the oven to 320°F and grease a loaf tin with some coconut oil, or coat it with baking paper.
Peel the plantains and cut into slices.
Puree the bananas together with coconut milk, olive oil and apple cider vinegar in a blender or food processor.
Add the remaining ingredients and grind for 2-3 minutes to make the flax seeds even finer.
Spoon the batter into the loaf tin, smooth out the top with a spatula and bake the bread in 45-50 minutes until golden brown and done.
Allow to cool for at least 30 minutes before serving the bread.
Tip: Do you always want nice fresh bread? Then cut the bread into slices, wrap them in baking paper and then a bag, and freeze them. You can defrost it the evening before you need the bread.
