Paleo Marshmallows

Make a healthy version of marshmallows.

Pour half of the water into the bowl that you will use to mix the marshmallows in. Sprinkle the gelatin powder over it and let it stand for a while. This will prevent lumps of gelatin getting into your marshmallows.

Grease a square baking pan or baking dish with some coconut oil and then line it with baking paper (the oil ensures that the paper sticks to the dish or pan).

Sprinkle the paper with some arrowroot.

Mix the other half of the water with the honey and/or maple syrup (you can use this in a ratio of your choice) in a saucepan.

Bring the mixture to the boil, making sure it does not boil over. Let the mixture boil until it reaches a temperature of 240°F. You can use a digital kitchen thermometer for this.

Remove the pan from the heat immediately when the mixture is at the correct temperature.

Start by mixing the gelatin mixture (in a food processor or by hand) and carefully pour in the hot syrup.

Continue to mix until the mass has tripled in volume and it has peaks that remain upright for a short while.

Now mix the vanilla powder with the marshmallow fluff.

Scoop the mass into the baking tin and smooth it out - do this quickly, as it becomes increasingly sticky. Sprinkle with arrowroot and let it stiffen up for at least 4 hours.

Cut the marshmallows into pieces with a sharp knife, and sprinkle the arrowroot around the marshmallows to prevent them from sticking together.
