Cut the onion into thin rings, peel and grate the butternut squash.

Heat a skillet over medium heat and fry the bacon cubes.

In the meantime, heat the coconut oil in a small frying pan and fry the egg over low heat. After cooking, lay the egg aside.

When the bacon cubes are crispy, add the onion and sauté gently.

Spoon the grated bottle squash into the dish and fry for 3 minutes.

Serve the rösti with the fried egg and some pepper to taste.
