Preheat the oven to 170 degrees Celsius and line a baking tray with parchment paper.

Combine, almond flour, cassava flour, gingerbread spices, fennel seeds, baking salt and salt in a bowl and stir well.

Add maple syrup and lemon juice and stir to a thick, sticky dough.

Put the dough in the fridge for half an hour to get firmer.

Roll about 10-12 equal sized balls of dough and place on the baking tray, flattening them slightly.

Brush the chewy chewy with beaten egg or with coconut milk.

Bake the chewy chewy for 15 minutes until golden brown and let them cool completely before serving. Believe me; when cooled, they are even better and the structure is perfect!
