Peel the plantains and chop them coarsely, then puree them using a blender or hand blender.
Stir coriander, tapioca flour and garlic powder into the puree.
Sprinkle the shredded coconut on a plate and drop a large tablespoon of the banana mixture into it.
Roll the plantain cookie through the shredded coconut until it is completely covered. Set aside on a clean plate and repeat with the rest of the plantain mixture.
Heat 2 tablespoons of coconut oil in a frying pan and bake the cookies in it for 2 minutes per side until golden brown. Bake 4 to 5 cookies at a time, then heat some new coconut oil in the pan and fry the remaining cookies in it.
