Chop the onion, cut the carrot and the mushrooms into slices and finely chop the flat parsley.

Put the cod, onion, carrot, mushroom, capers, lemon juice and coconut milk in the slow cooker and mix well.

Put the slow cooker on the low setting and let it simmer for 3 hours.

Season to taste with salt and pepper and garnish with the parsley.
