Heat the coconut oil in a frying pan and fry the pork or beef roulade on a high heat till golden brown.
Put a lid on the pan and let it roast gently over a very low heat. Turn the roulade occasionally.
Keep a close eye on the meat's core temperature with the help of a meat thermometer.
Is the core temperature between 135 and 140°F? Then the roast is ready and has a nice pink colour on the inside.
