Slice the chorizo.
Peel the garlic and chop finely, cut the red onion into half rings.
Remove the skin of the butternut squash with a peeler. Turn the long, straight part of the pumpkin into noodles using a spiral cutter, julienne peeler or regular peeler.
Heat the coconut oil in a wok or frying pan and fry the onion and garlic. Add shiitakes and bake for approximately 4 to 5 minutes.
Add chorizo and fry with stirring until the chorizo has lost most of its fat.
Spoon the pumpkin noodles into the dish and fry until al dente in about 3 minutes.
Finely chop the fresh herbs and mix them with the dish just before serving.
