Preheat the oven to 390°F and line a baking sheet with baking paper.
Peel the garlic cloves.
Peel the beets and cut them into small cubes or slices.
Rub the coconut oil through the beets and garlic cloves and spread them on the baking sheet.
Roast the beets and garlic until done in 20-25 minutes. Then let the vegetables cool off briefly.
Combine the roasted beets and garlic with the other ingredients and puree until smooth.
Store the hummus in the refrigerator until use.
