Heat the coconut oil in a pan and fry the onions over a low heat for 15 minutes, together with the thyme and bay leaf.

Pour the apple juice and balsamic vinegar over the onions and let it simmer for 60 minutes or until most of the moisture has evaporated.

Keep the chutney in a jar, put the lid on and let cool off. Store the chutney in the fridge.
