Medjool dates (pitted)
Combine Brazil nuts, dates, cranberries, vanilla and salt in a blender or food processor and grind into a crumbly mass.
Add 1 or 2 tablespoons of water and thoroughly mix again until a sticky mixture has formed.
Sprinkle some shredded coconut on a plate. Roll the balls from the mixture and then immediately roll them through the shredded coconut.
Keep the balls in the fridge until serving.
