Cut the rhubarb, halve the strawberries.
Combine the rhubarb, strawberries and lime juice and lime zest in a saucepan and let it cook over a low heat, stirring occasionally, until soft, in about 20 minutes.
In a bowl, stir the arrowroot with 2 tablespoons of water into a paste. Add this to the rhubarb while stirring with a whisk so the compote becomes somewhat thicker.
