Cut the salmon fillet into cubes.

Slice the garlic and finely chop the onion.

Grate the ginger and finely chop the lemon grass and basil.

Heat the coconut oil in a wok and fry the onion, garlic, ginger and lemon grass until the onion is soft.

Add coriander seeds, cinnamon, cumin seeds, turmeric, fish sauce, lime juice and coconut milk and bring to the boil.

Slide the salmon into the boiling sauce. Reduce the heat to low and let the fish cook for 6-8 minutes.

Garnish with the fresh basil.
