Coconut oil (melted)
Preheat the oven to 390°F and line a baking sheet with baking paper.
Slice the zucchinis and halve the olives. Finely chop the basil and slice the lemon.
Mix 1 tablespoon of coconut oil through the zucchini slices and divide them over the baking sheet.
Roast the zucchini in 15 minutes.
Heat 1 tablespoon of coconut oil in a frying pan and fry the salmon fillet in 2 to 3 minutes per side.
Serve the salmon with the roasted zucchini. Garnish with olives and basil and sprinkle with some pepper and salt.
Drizzle with some lemon juice.
