For the Salted Caramel: Grind the dates with the salt in a food processor or blender to form a sticky ball. Let the appliance run while you carefully pour in the coconut milk. Continue to grind until a smooth caramel has formed, with no pieces in it.

Stir the almond butter, vanilla powder and coconut oil through the salted caramel until you have a thick paste.

Put the paste in the fridge for 1 hour and then, using your hands, make 20 small balls from it. Place these on a baking tray and flatten slightly to make round candies.

Place the candies into the freezer for 2 hours.

Melt the chocolate au bain-marie.

Using two forks, dip the caramel candies into the chocolate until covered and then put back onto the baking tray. Sprinkle immediately with a little bit of the coarsely ground sea salt.

Put the chocolate caramels back into the fridge to allow the chocolate to set. Store in a cool place.
