Grind the dates and cashew nuts to a crumbly mixture in a food processor.
Add collagen, vanilla, salt and coconut oil and grind to a sticky, still slightly crumbly mixture.
Cover a cake pan with foil or baking parchment and press the mixture very firmly into this. Put in the fridge for at least 1 hour to harden and then cut into 6 equal bars.
