Preheat the oven to 300°F.

Mix the coconut flour with the arrowroot, salt and cinnamon or vanilla. Mix in the coconut oil/butter and the maple syrup/honey through.

You now get a fairly wet batter. Keep stirring for a while and you will notice that it slowly becomes firmer as the coconut flour absorbs more and more moisture.

Once you have a reasonably cohesive mass, dump this on a piece of baking paper.

Put a second piece of baking paper on top and roll the dough into a slab of about ⅛ inch thick.

Place it on a baking sheet and let it rest in the fridge for an hour. The dough now becomes firm enough to cut cookies from it.

As soon as the dough feels firm, you can press and cut the cookies from it.

Remove the excess dough, which you can roll out again for an extra batch of cookies. If it is not possible to remove the excess dough without damaging the cookies, then put the dough in the fridge for a while to allow it to set again.

Bake the cookies golden brown in about 10 to 12 minutes.


Let them cool off before you take them off the plate or they will fall apart!
